Kicking Horse Mountain Resort, a growing four-season resort in Golden, BC, is seeking a dynamic chef with a strong professional background, ability to implement quality standards, strong people management skills, the ability to create a positive, productive and professional environment, and unparalleled passion to join our team.

The Chef will be responsible for menu envisioning and planning, plating design, ordering, food preparation and general administration for our three resort Food & Beverage outlets. This role works closely with the Manager, Food & Beverage and Assistant Manager, Food & Beverage to ensure food preparation and planning of special events exceeds guest expectations to provide the finest mountain dining experience. This role will also provide leadership and mentoring to help the Manager, Food & Beverage build a team of engaged culinary professionals.

Accountabilities

• Engage in menu planning for the food program for three Food & Beverage outlets, encompassing fine dining, fast quality, and ‘sip and grip’ concepts
• Conduct food costing for all menu items to ensure alignment with departmental budget and established labour, inventory, cost of goods and expense targets
• Drive goals and objectives as outlined in the Food & Beverage business plan for 2009-2010
• Develop standards for team in food preparation, cooking, plating and presentation for each outlet and establish processes for all culinary roles
• Supervise, manage and develop a team of culinary professionals
• Recommend and implement changes to continually improve the dining experience
• Maintain effective communications through restaurant, department and resort
• Foster and maintain a professional, positive and effective environmental in all outlets at all times
• Ensure food is received, stored, handled and prepared in a hygienic and Food Safe manner and that all cooks maintain a clean and safe work space
• Ensure ordering is performed in an effective, efficient and timely manner
• Ensure all departmental administration is carried out in a timely and accurate manner, including ordering, invoice coding, reporting, food costing, scheduling, payroll and time-keeping, on-boarding, and performance management
• Assist the Food & Beverage Manager and Assistant Manager, Food & Beverage to plan and develop events, wine dinners, and special functions

Qualifications

• Minimum of 3 years culinary experience in a leadership role (sous chef or head chef)
• Minimum of 1 year previous experience with responsibility for labour, expense, and inventory costing and reaching financial targets
• Previous experience developing back of house best practices and processes (recipe breakdowns, menu costing spreadsheets, pickup charts, open/close procedure checklists, training materials)
• Familiarity with the MS Office suite (Word, Excel, and Outlook) and experience with basic reporting
• Food Safe certificate Level 1 and 2
• Extensive customer service and people management experience and demonstrated ability to build and foster a professional, positive working environment
• Formal education (certificate or diploma) in professional culinary skills required; Red Seal certification a distinct asset
• Previous resort restaurant experience an asset
• Previous multiple outlet experience an asset
• Current Occupational First Aid (OFA) Level 3 or Outdoor Emergency Care (OEC) certification with Automated External Defibrillator (AED) or Entonox training an asset

Working Conditions

• This position may have two periods of layoff or decreased hours (up to four weeks each) in the shoulder season
• This position is classified as a manager as defined by the Employment Standards Act of British Columbia and is compensated on a salaried basis
• This position requires flexibility in hours including evening and weekend hours
• Ability to ski or snowboard is a distinct asset as ability to access to our mid-mountain location is an essential part of the role
• This role may be exposed for brief periods to extreme weather conditions on resort (cold, wind, snow, rain, altitude)
